Yes these systems will overwrite the data, replacing the oldest files with the newest ones.
Multiple hard drives can help with redundancy in saving recordings. On larger systems you can also run specific RAID setups, or channel groups to prioritize one camera's storage over another.
Multiple hard drives will give you flexibility when it comes to how recordings are stored.
However, none of this is required and the system will function and record just fine with a single hard drive.
