For example, on the top of an 8' tall, 6x6 wooden post? That way there would not be a support bracket in the way when the camera pans, and the support bracket would not reflect IR light back into the camera.

No, it cannot be mounted upside down. The camera has limits on its tilt, and would be unable to angle itself far enough down when mounted this way.
If the mount is a concern I would look into a ceiling mount as it would give it all the benefits you listed, without mounting the camera in a way that prevents it from working correctly.
